For example: connect via OPC UA, or have a device publish directly to MQTT. You may need to be a little more specific with your questions.

_historian

schema. Everything under that topic gets imported, and you can use the tag browser (online) to help you set up Grafana queries against the historian. Click on the "Historian Data Contract" link at the end of that page for even more details.
